In my quest to follow the Nutritarian Eating Plan more closely, I seek opportunities to make salad a main dish as many days as possible. The day prior to putting this creation together, I roasted chicken thighs in Trader Joe’s Organic BBQ Sauce with Sriracha (in covered ceramic dish in a 400 degree oven for 90 minutes).
That dish went over so well that there was only about two ounces of chicken left. The salad is a spring mix (I bought mine from Target) with the shredded chicken, diced fuji apple, sliced banana, blueberries, diced tomatoes, shredded Jarlsberg cheese, a tablespoon of hemp seed, a teaspoon of chia seeds and topped with Trader Joe’s Soy Ginger Sesame Seed Vinaigrette.
